# Basque Tables > A directory of Basque dining rooms in California, Nevada and Idaho. Every field names its source. ## How to read a record - provenance tier: cited (a named source says it), harvested (a directory row), tradition (what the trade says, untested), inference (reasoning from records here), field (seen). - seating, picon, prices, hours, status and address may NEVER carry tier tradition or inference. - hours have three states: open, closed, and not published. A day nobody published is excluded from every filter rather than guessed either way. ## Data - /api/places.json — every room, flat - /api/counts.json — counts by type and state - /api/coverage.json — what is missing - /api/prices.json — every printed menu price - /api/search.json — search documents ## Pages - [Bacalao al pil-pil](https://nanobotco.github.io/basque-tables/dish/bacalao-al-pil-pil/): Salt cod, garlic, oil and chilli, worked until the cod's own gelatin turns the oil into a sauce.
