Celery here is the petiole — the leaf stalk of Apium graveolens — cut raw to finger length. It cools the mouth between wings, it carries dip, and it is the one item on the plate nobody asks for.",
  "story": "The Anchor Bar's account puts the vegetables on the plate from the first night: on 4 March 1964 Teressa Bellissimo fried wings for her son Dominic's friends and brought out cut celery and blue cheese for dipping as hors d'oeuvres. The celery was there to be grabbed because celery was everywhere. The New York Public Library's historical menu archive shows it as the third-most-popular item on New York City menus through the 19th and early 20th centuries, behind only coffee and tea, served in celery vases to be salted and eaten raw; whole varieties have since vanished because they were hard to grow and did not ship. North American commercial growing narrowed onto one cultivar, 'Pascal'.\n\n*Inference —* the wing plate kept a garnish the rest of American dining dropped, so a bar basket in 2026 preserves a habit the city around it stopped having.",

The strings that peel off a stalk are bundles of angular collenchyma cells sitting outside the vascular bundles, which is why celery pulls apart lengthways and not across. Carrots go in raw, as sticks or as whole small carrots. Everything serves cold against hot wings, with the dip in its own cup. Freshly cut celery decays fast, so a kitchen cuts near service and keeps it at 0–2 °C.",
