  "story": "The dish belongs to two kitchens at once. Chinese-American restaurants pioneered take-out and delivery in the United States — New York delivery was pioneered in the 1970s by Empire Szechuan Gourmet Franchise, which hired Taiwanese students from Columbia to do it — and they were among the first American restaurants to use picture menus. Fried rice earned its place on those menus because it is fast, uses rice cooled overnight, and suited American tastes; the American version takes more soy sauce than the versions found in China.\n\nMumbo sauce came in from the other side of the counter. It is a takeout condiment specialty of Washington, D.C., put onto fried chicken wings, french fries, fried jumbo shrimp and fried rice, and it is often compared to Chicago's mild sauce, also a takeout sauce of that city's Black neighbourhoods.\n\n*Inference —* the plate is what happens when a Chinese-American carryout menu meets a Black Washington sauce over the same counter, and neither side's cookbook explains it on its own.",
