  "story": "The physics is the reason the method works and the reason it burns people. Deep frying puts food in oil typically between 350 °F / 177 °C and 375 °F / 191 °C, though fryers can pass 400 °F / 205 °C. Hot oil heats the water inside the food and steams it; the vapour pushes outward and oil cannot travel against that flow, so as long as the oil is hot enough and the food is not in too long, penetration stays at the surface — foods deep-fried at proper temperatures absorb less than about 2 tbsp per 2.5 cups of oil used. Cook too long and the water is gone and the oil comes in.\n\nThe informal tests are older than the thermometers. A pinch of flour should sizzle without burning. A piece dropped in should sink a little and come back up: sinking without resurfacing means the oil is too cold, not sinking at all means it is too hot.\n\nThe pressure version runs a different physics. A pressure fryer is a pressure cooker filled with hot oil, so food cooks fast at high heat while keeping its water — the machine behind broasting, and behind the jojo.\n\n*Inference —* the fryer is what made the wing a bar food rather than a kitchen food. It needs no cook watching a pan, it turns out a countable portion in minutes, and it will do fries, mozzarella sticks and pizza logs out of the same oil while it waits.",
