  "story": "Bonchon began in the Busan chimaek trade — fried chicken eaten with beer — and built a double-fry meant to render fat out of the skin and leave a thin shell behind. Seo's own account of the moment it worked, on the company's site: \"When police were dispatched to manage traffic around the new restaurant, I knew we had a winning formula.\"\n\nThe United States came next, through Fort Lee, New Jersey, and then twenty other states. Southeast Asia came by master franchise: the Scotland Food Group took the Philippines in 2010 and built 180 restaurants there; Minor International runs over 110 in Thailand. The home market went the other way. Facing saturation, the company shut its South Korean retail operations by the end of 2016 and turned itself into a pure export franchise, which makes it the first Korean fried chicken brand to expand internationally.\n\nVIG Partners, a South Korean private equity firm, bought 55 percent for 60 billion won in December 2018, and the founding family kept 45. Headquarters moved to Dallas in 2021. In March 2026 VIG put the brand up for auction through William Blair; more than 100 buyers from the United States and Asia looked, and analysts valued the business at 3,000 billion won.\n\nThe chain has drawn criticism it has not always answered. Bonchon in South Korea, with the wider fried chicken trade, was accused of shrinkflation — smaller birds at higher prices — after which South Korean chicken restaurants were required to tell customers the pre-cooking weight. The Thai arm dropped a mandatory 10 percent service charge in 2024 after complaints. In October 2019 Bonchon paid more than $10,000 in back wages, tips and damages to former workers at the Dinkytown restaurant by the University of Minnesota, settling with the Minneapolis Labor Standards Enforcement Division a dispute over tips reassigned to kitchen staff.",
