  "story": "The first Hattie B's opened in Midtown Nashville on 9 August 2012, at 112 19th Avenue South. The name comes from three women in the Bishop family, all called Hattie. The company is privately held and family owned.\n\nThe chicken is the Nashville preparation: fried, spiced, laid on white bread with pickles. What Hattie B's added was a written scale. Six steps are posted — Southern (No Heat), Mild, Medium, Hot!, Damn Hot!! and Shut the Cluck Up!!! — and the top one is built with ghost peppers.\n\nExpansion followed the ladder. West Nashville in June 2014, Birmingham, Alabama in June 2016, a third Nashville shop in November 2017, Midtown Memphis in April 2018, Atlanta in July 2018, The Cosmopolitan in Las Vegas that autumn, Dallas in February 2022, and in 2026 a first Midwestern shop in Chicago's Wrigleyville, with Wicker Park and River North announced.\n\n*Inference —* the argument this house draws is about what a heat ladder does to a dish. A printed scale makes the heat orderable by a stranger; at a shack it is a conversation with the counter. Both are Nashville hot chicken, and people will tell you at length which is which.",
