  "story": "Baumer Foods started in New Orleans and stayed a family business. Its factory on Tulane Avenue in Mid-City carried a lighted sign — a chef stirring a pot, steam from the plant venting out through the pot — visible from Interstate 10 and known across the city. The preserves the sign advertised went into US military rations in the Second World War and are no longer made.\n\nHurricane Katrina wrecked much of the New Orleans plant in 2005, sign included. The company moved production up the Mississippi to Reserve, in St. John the Baptist Parish; the sign was replicated and set on top of a new apartment building on the old factory site. As of April 2021 the head office sits in Metairie.\n\nThree million US gallons a year ship to seventy-five countries. The brand is popular in Saudi Arabia, carried there by Louisiana petroleum workers. David Chang has said Crystal is his favourite hot sauce, and Ed Currie, who bred the Carolina Reaper, called it \"probably the best tasting of the table sauces.\"",
