Bars and restaurants make an extra-hot sauce specifically so there is something to fail at, and reward whoever finishes with a photograph on the wall or the website, a commemorative T-shirt, a free meal, or some combination.\n\nQuaker Steak & Lube runs the form at its most elaborate: its Atomic Scorpion sauce is published at 800,000 Scoville heat units, entrants sign a standard waiver, silicone gloves stay on, no bathroom breaks, and the finishers get a free t-shirt and their names on a chalkboard. Drinks are allowed, and there is no clock.\n\n*Inference —* the waiver is the point of the word. A signature turns an order into an event, and an event is what gets photographed, which is what the wall is for.",
