In South Carolina the same money is often raised on hash: the Highway 34 Volunteer Fire Department outside Ninety Six cooks it in cast-iron pots and sells it by the quart to neighbors who read the notice in the paper and phone in an order.",
  "story": "The fundraiser is where the whole-hog barbecue of the colonial Carolinas went when the plantation left: barbecues for fundraisers, church gatherings and political rallies are on record in the Carolina colonies, and John Shelton Reed's line is that until the early twentieth century barbecue was reserved for harvests, fundraisers and rallies. Mallard Creek Presbyterian Church in Charlotte is the form at full scale: begun in 1929 to pay $89.50 of Sunday-school debt, it grew to 14,600 pounds of pork and 20,000 eaters by 2015 and ran ninety-three years on volunteers taking a week off work. Hillsborough's Hog Day began in 1983 as a chamber-of-commerce fundraiser and since 2014 has been the Orange County Optimist Club's, its proceeds to children's programs — Future Farmers of America, the Hillsborough 4-H and a church youth group in 2025. On the coast the volunteer fire departments own the Saturday calendar: Back Swamp's annual barbecue and raffle at the station on Catherine Lake Road is one of dozens. South Carolina's version is the hash sale: fire stations, churches and civic groups stew pork, liver and onions in iron kettles over a wood fire and sell hash by the quart; at Highway 34 VFD, Melvin Fouchee learned the recipe from Ike Berry and the department buys its equipment on the proceeds. The South Carolina Barbeque Association's cook-off calendar is much the same list under another name — Troop 61's competition at Pomaria, the Hopeful Hog Festival at Lancaster.",
