Its three stated goals are to celebrate wood-cooking, to honor the places that keep it, and to teach eaters the difference between wood-cooked barbecue and what it calls 'faux 'cue'.",
  "story": "Reed and his wife Dale wrote Holy Smoke (2008) and in it lamented how much North Carolina barbecue was cooked on gas. In 2013 he and Dan Levine — 'Porky LeSwine' of the blog BBQJew, the campaign's 'Chief Smoke Detector' to Reed's 'Eminence Grease' — founded the campaign to find and list the places still cooking entirely with wood or charcoal. On April 23, 2014, in the Raleigh News & Observer, they issued the True 'Cue Challenge: a prize to anyone who could name the statute, regulation or official that forbade a restaurant to cook with wood, since owners so often said the health department had made them switch. Two years on, Reed wrote, no one had claimed it, and Daniel Vaughn in Texas and Robert Moss in South Carolina had found the same in their states; one state official mentioned environmental concerns, and Reed allows that gas and electricity are cheaper, easier and more consistent. The campaign draws its line with care: it certifies only wood-for-heat, but has 'no beef' with cooks who use gas or electricity for ignition and temperature control so long as wood smoke reaches the meat, and reserves 'faux 'cue' for meat cooked with no smoke at all. Its Pledge is for those who hold that if it is not cooked with wood it is not barbecue. Its wood page quotes a federal meat-labeling rule defining barbecued meat as cooked by the direct action of dry heat from burning hardwood, and gathers witnesses from Pete Jones to Rodney Scott, Wilber Shirley and Aaron Franklin, with Alton Brown's joke that gas lets you control the heat, 'but you're going to go to hell'.",
