  "story": "Moss, 'a son of the low country of Florence, S.C.' in the Asheville chamber's words, learned smoke from his grandfather's whole hogs. He came to Asheville in 2007 to help open The Admiral, whose cooking put him on the James Beard Foundation's semifinalist list for Best Chef: Southeast in 2013. A first deal for a barbecue place fell through; Meherwan Irani of Chai Pani reached out within forty-eight hours, and Buxton Hall Barbecue opened in August 2015 in a 1930s roller rink on Banks Avenue on the South Slope: pasture-raised hogs from western North Carolina farms smoked over wood from ten at night to eight in the morning, hash and rice made from the pig's organs and trimmings, a fried chicken sandwich, pies on lard crusts. 'When I'm in here, I cut all the lights off except this little lamp,' he told Our State in 2016, 'and it's just like I'm outside, cooking a pig, standing in front of the burn barrel.' Bon Appétit put the restaurant ninth among the country's new restaurants in 2016 and named the sandwich its fried chicken sandwich of the year; the Beard Foundation listed him as a semifinalist again in 2017. He left Buxton Hall in July 2022, opened two West Asheville restaurants, Regina's and Little Louie's, in the summer of 2023 and left them within six weeks, and in March 2024 announced on Instagram that after seventeen years he and Jennifer were leaving Asheville to keep cooking whole hog somewhere else. The somewhere was home: Elliott's Barbecue Lounge opened inside Seminar Brewing at 551 West Lucas Street, Florence, in the spring of 2025 — pasture-raised whole hog 'cooked Pee Dee burn barrel-style', in Robert Moss's words for Southern Living, with collards, hash and rice and a buttered, grilled bun.",
