  "story": "Reed came to barbecue after a career on the South itself: MIT, a Columbia doctorate in 1971, the Center for the Study of the American South, which he helped found, and the quarterly Southern Cultures, which he co-edited. Holy Smoke, written with Dale and William McKinney, gives North Carolina's two styles their history, their recipes and their people, and in it the Reeds lamented how much of the state's barbecue was cooked on gas. In 2011 he wrote the introduction to the Southern Foodways Alliance's North Carolina barbecue oral histories, opening with George Washington's diary for May 27, 1769 — a barbecue in Alexandria and a night away — and the point that until the early twentieth century barbecue was for harvests, fundraisers and rallies, never home cooking. The campaign came two years later: a retired professor 'with time on my hands', in his words, and Dan Levine, 'Porky LeSwine' of the blog BBQJew, set out to find and list the places still cooking entirely with wood, Levine as Chief Smoke Detector, Reed as Éminence Grease. On April 23, 2014, in the Raleigh News & Observer, they offered a prize — an apron, later a cap as well — to anyone who could name the statute, regulation or official that forbade a restaurant to cook with wood, since owners so often said the health department had made them switch; two years on nobody had claimed it, and Daniel Vaughn in Texas and Robert Moss in South Carolina had found the same in their states. Reed allows that gas is cheaper, easier and more consistent. Dale Volberg Reed died in 2018. On Barbecue (University of Tennessee Press, 2021) collects his essays, reviews and op-eds on the subject, and in 2023 the governor gave him the Order of the Long Leaf Pine.",
