  "story": "High was 74 when South Carolina Living profiled him in September 2015 as 'the guru of 'que': a master judge of the association he founded, certified as well by the Kansas City Barbeque Society, the Memphis Barbecue Network and the American Wine Society, who said he had probably eaten more barbeque than anyone in the state. When he and Rolandi founded the association the state had two cook-offs a year; by 2015 it had thirty-seven, more per head than any other state, and the association had certified more than 800 judges. His book, published in June 2013 while he was the association's president, runs from the 1500s — Native Americans cooking pork on frames after the Spanish brought the pig, and, in his telling, Europeans learning barbecue at the sixteenth-century colony of Santa Elena at what is now Port Royal — through the 1920s, when the craft settled into restaurants, to the cook-off era. The sauce account, posted on the association's site over his name as founder, runs in order of age: vinegar-and-pepper first, hundreds of years old; mustard from the German settlers of the 1730s to 1750s, distinct to South Carolina; light tomato, vinegar-and-pepper with ketchup, from around 1900; heavy tomato, the newest, of the last sixty years. Only South Carolina, he holds, has all four. Robert Moss, another South Carolinian, counts two: sweet mustard and spicy vinegar. In 2015 High told the magazine, 'Barbeque is a noun, not a verb. It's something Southerners eat, not do.' In August 2018 the co-founders named Jim Wellman of Lexington president and Don Adkins of Seneca vice president.",
