In rural North Carolina neighbors gathered before dawn; water was heated with fire-hot stones dropped into barrels; the penned and fattened hogs were killed with knives, bled, scalded, hung on a gambrel — a spreader bar through the hind legs — and scraped clean of hair; the carcasses cooled overnight and were cut up the next day, the hams, sides, shoulders, jowls and heads salted down in the smokehouse. Lard was rendered, the fat cooked down to cracklings, the trim ground for sausage. It is the farm year's pork day, and the social form the pit barbecue grew up beside.",

Powell's entry in the Encyclopedia of North Carolina (2006) describes the day as farms kept it: as many as a hundred hogs penned and fattened on peas, potatoes, corn gleaned from the harvested fields or mast from the woods; workers from the neighborhood gathered well before dawn; stones heated in an open fire and dropped into barrels to heat the scalding water; the hogs killed with large knives, bled, scalded, hung and scraped; cooled overnight, cut up and salted the next day on a tilted platform in the smokehouse, the dripping brine caught in troughs and boiled down to save the salt for the stock. The weeks after were spare ribs, liver and sausage; the hams came a month or two later. Carolina Country followed the Jackson family of Hopkins through a January hog killing in 2019: Terry Jackson directing, his son in training, neighbors and friends at the scalding vat; sausage seasoned with salt, red pepper and sage and a patty fried over the wood fire for approval; lard rendered and cracklings saved; hams and shoulders carried to the salt room; chitterlings, feet and bones for broth; a pot of homemade soup at midday for everyone who came. The pit's relation to the day is old: George Washington raised pigs for slaughter in November at Mount Vernon and, once the enslaved people had cured the hams and bacon, whole pigs were pit-roasted over coals 'as a treat'. John Shelton Reed writes that barbecue was never home cooking, and until the early twentieth century was reserved for harvests, fundraisers and political rallies. *Tradition holds —* the hog killing and the pit shared a season and a crowd, and a pig set aside from the killing was the cheapest way to feed the neighbors who came to help.",
