In Orangeburg itself the line is Earl Duke's: he opened downtown at Chestnut Street and Columbia Road in 1955 and later moved to Whitman Street, and his sister's family runs a second Dukes on Chestnut Street. Both sell from a buffet line: chopped pork in a mustard-and-ketchup 'rust' sauce, hash over rice — the Midlands' stew of pork and onion — fried and barbecued chicken, and a loaf of sliced white bread at the end.",
  "story": "Manuel Dukes was born in rural Orangeburg County around 1875. His sons became the county's pitmasters, catering barbecues, and historians have suggested that their German descent explains the mustard in the sauce. Willie Baltzegar, a Rowesville pitmaster, taught them. In the 1950s the sons and daughters opened restaurants: Danny Dukes first, in Cope and Branchville; Earl Duke in Orangeburg in 1955, at Chestnut Street and Columbia Road, later moving to Whitman Street beside the Pepsi plant; a sister, Elma, and her husband Harry Ott on Spruill Street in North Charleston; and others in Aiken, Elloree, Smoaks, Ridgeville, Blackville and New Ellenton. The name spread past the family, and by 2017 some Dukes were family-owned and others sold. Earl's Whitman Street house passed to Harold Kittrell, a carpenter, and then to his son Tony, who told the Southern Foodways Alliance in June 2012 that 'the barbecue, hash, and rice, our sauce, sweet tea, and sliced bread are just what people come here for' and gave the sauce its name: rust gravy — sweet, ketchup-based, orange-yellow, thicker than most. The Otts opened in St. Matthews in 1965 and moved to Chestnut Street in Orangeburg ten years later; their descendants cook fifty to fifty-five pigs a week in the pit out back, Wednesday to Friday, for a buffet that is 'just barbeque, hash, rice and slaw with loaves of bread at the end'.",
