The first room was in south Asheville by two 2017 accounts, and Merrimon Avenue came in 2009, mid-recession; he later bought the Merrimon property. Explore Asheville's profile of him says he owns the business with his wife Ashley Miller, and a 2017 piece has the two of them beginning a hunt for a second site in 2014; the Biltmore Park room opened in spring 2016 and the business marked ten years in 2017. The restaurant's own pages name only Jeff, as owner and pit boss, which is the asymmetry a reader should know about before deciding what the ownership line means. The fire is the other open question. The only description of it found anywhere is from Our State in August 2011, which watched the kitchen manager open the heavy doors of a smoker cycling meat over hickory coals twenty-four hours a day.
