  "story": "Sam Jones grew up in the Skylight Inn, which his grandfather Pete Jones opened in Ayden in 1947; he left the family business as a teenager and came back, telling the Southern Foodways Alliance in 2011 that returning was like a flag-bearer keeping the standard up on the field. In 2014 he and Michael Letchworth, who had worked at the Skylight since 2004, signed for a loan and began building in Winterville; Sam Jones BBQ opened on November 10, 2015. The restaurant's own history counts Southern Living's 2012 list of ten Southern pitmasters among its credentials. In 2019 Jones and Daniel Vaughn published Whole Hog BBQ: The Gospel of Carolina Barbecue, which writes the family method down. The Raleigh restaurant at 502 West Lenoir Street opened softly in February 2021 in a building that had been Dusty's Garage, keeping the old floor and hanging family photographs; it seats about 140 inside and out, with a private room upstairs and a bar. INDY Week reported in May 2021 that three hogs a day went on at about one in the afternoon, cooked at 250 degrees until ten, were held overnight, and had their skin crisped the next morning.",
