It cooks pork shoulders over hardwood charcoal — whole hogs at the start, shoulders later for leaner meat — and barbecue chicken with a tangy sauce, with hushpuppies and collards from the recipes of Paul's wife Jean, a home-economics teacher. It serves about 600 meals a day and closes on Sundays.",
  "story": "Paul Stephenson raised shoats — young pigs — on a Depression-era farm. A man bought fourteen of them one day, and when Stephenson asked what for, he said the barbecue man wanted them. Stephenson did the arithmetic: a hundred-pound pig sold for $11.50, and cut into three-ounce sandwiches at 35 cents each it was worth a good deal more. He taught himself to cook a pig, put up a building on his own land, and sold his first barbecue in July 1958. He cooked over hardwood until the energy crisis of the mid-1970s, when the family switched to hardwood charcoal; Andy Stephenson, who took over after his father died about 2008, told Our State in 2014 that charcoal cooks slower and needs checking less often than wood. The whole hog gave way to shoulders for the reason customers everywhere gave, leaner meat. Jean Stephenson worked out the collards and the hushpuppies.",
