  "story": "When a cutter with two concentric circles came into use around 1870, every ring made a small disc of dough as a by-product. That disc could be fried and sold, or thrown back into the batch. The name sticks to the piece that was removed, not the space it left, which is why the thing you buy is the opposite of what you asked for.",
