  "story": "The name is Portuguese: mal and assado, badly roasted, for the unstructured shape — or, another account has it, for the underdone dough inside. Malasadas descend from the mainland and Madeiran filhós, a product of the sixteenth-century sugar industry, and travelled through Macaronesia to the Azores, the Canaries and as far as Brazil. They are first described in the Dicionário Houaiss da Língua Portuguesa in 1609 and appear in the ledgers of the Convento da Encarnação in Lisbon between 1688 and 1762.\n\nPortuguese contract labourers carried them to Hawaii, where they are called Hawaiian donuts often enough that the name has stuck to them in the rest of the country too. The Azorean malasada is a Carnival food; the Penedono filhós, made with brandy and olive oil instead of milk, is eaten year round, and the Portuguese agriculture directorate treats the two as distinct.",
