"what": "A shallow pan of thin sugar glaze beside the fryer, where raised rings are dragged through face-down within a minute of coming out of the fat.",
"story": "Glaze is a thin coating applied to food — here, powdered sugar with water or milk and sometimes a little fat, thin enough to run off and set clear. On a hot ring it soaks the crust and hardens into a shell; on a cool one it sits on top and stays tacky.\n\nCake rings are finished differently for the same reason: a hot cake ring drinks a thin glaze and goes soggy, so it takes sugar, cinnamon sugar or a heavier icing instead.",
"how": "Dip, turn, lift, drain on a screen. The pan is topped up all morning and the glaze thickens as the shop warms.",
"today": "The glaze table is where a shop's whole tray of raised donuts is either made or ruined, in about a minute each."
