   "text": "Yeast and cake donuts share most of their ingredients. What separates them is the flour and the lift. Cake donuts use cake flour, around 7 to 8 percent protein, which crumbs rather than pulls, and they rise on baking powder or baking soda. Raised donuts use a stronger dough and baker's yeast, and they need time.\n\nThat difference sets everything downstream: how long the dough occupies the shop, how the ring is formed, how long it sits in the fat, how much fat it takes up, how big it comes out, and how long it is worth selling."

Cake rings fry about 90 seconds at 190 to 198 °C, turning once, and weigh 24 to 28 grams.\n\nOn oil, the published accounts diverge. One says yeast-raised donuts contain about 25 percent oil by weight and cake donuts around 20 percent, with extra fat mixed into the batter before frying. Another says cake runs 20 to 25 percent and yeast 25 to 35, and that commercial cake rings fry for 30 to 45 seconds at 191 °C.\n\nNeither cites a laboratory. Both agree on the direction — the raised ring spends longer in the fat and carries more of it out — and disagree on the size of the gap. This project prints both."

   "h": "Why the machines chose cake",
   "text": "When donut shops industrialised in the 1920s and 1930s, the raised dough was at a disadvantage: it needs time to rise and it is harder to handle. Baking soda was predictable and easy to automate, so most bakers went the cake route. The cake ring also appeared in American cookbooks a century earlier, in the 1830s, once pearlash was easy to buy.\n\nThe raised ring survived anyway, because a glazed raised donut is what most people mean by the word."

   "text": "*Inference —* a shop that runs both doughs well is running two processes with different clocks in one small kitchen, which is most of the work in a mom-and-pop donut shop and none of the work in a shop that buys its donuts in.\n\nWhich side of the case carries the flavours is a reading, not a count: cider, buttermilk, sour cream, blueberry and chocolate sit on the cake side, and the raised side holds glazed, bars, fritters and filled."
