  "story": "Chinese labourers were recruited to the Delta by cotton planters during Reconstruction, most of them men from the Siyi region of Guangdong. By the end of the 1870s they had left the plantations and opened small family groceries in Delta towns, and families followed in the early 1900s. The stores served Black customers that white-owned stores treated badly, in a state whose records classified the owners as \"colored\".\n\n*Inference —* the donut counter in a Delta grocery belongs to the same logic as the egg rolls in a California donut shop: a family business open early with a fryer already lit adds the thing that sells at that hour. This project has not found a published history of Delta grocery donut counters, and says so rather than inventing one.",
