  "story": "Ted Ngoy left Cambodia with his wife and three children in 1975, ahead of the Khmer Rouge, and came through the U.S. Refugee Admissions Program to Camp Pendleton. He took a janitor's job at a Lutheran church in Tustin and a second job at a gas station, noticed how busy a local donut shop was, and asked to learn the trade. An affirmative-action hiring program at the Winchell's chain trained him; he managed a store in Newport Beach and put his wife and nephew to work in it. In 1977 he bought his own shop, Christy's Donuts in La Habra, and named every shop he bought afterwards the same thing.\n\nBy 1979 he had more than 25 shops. He grew tired of running them himself, so he trained relatives and refugees and leased shops to them — \"I sponsored more than 100 families\", he said, and claimed each on official paperwork as kin. By 1987 he had 32 Christy's; at the peak he reckoned 65. The leasing model is the part that mattered: a family arrived, learned a trade in a month, took a shop, and a few years later sold or leased a shop to the next family.\n\nKQED reported in 2021 that roughly 90 percent of California's 5,000-plus independent donut shops were Cambodian-owned. The pink box itself is attributed to Ngoy and Ning Yen, who were helping other Cambodians set up shops: cheaper matte pink stock instead of the glossy white box.\n\nWhy the second menu is there is not a mystery either. Jolly Chan, who opened China Express and Donut by the 24th Street BART station in San Francisco in 1993, put it plainly to KQED: \"We have to sell more stuff to make up the rent and the expense.\"",
