  "how": "Split, burned down to coals in a firebox or at the edge of the pit, then raked under a grate on a hand crank. The cook moves the meat up and down instead of moving the fire. Little smoke matters here: the valley is windy, and the cooking is hot and quick rather than long and low.",
  "notes": "The local name turns out to be good botany. Coast live oak is a semi-evergreen oak of the California Floristic Province, growing from Mendocino south into northern Baja, and it sits in the red oak section of the genus — though unusually for that group its acorns ripen in seven or eight months rather than eighteen. Californio Spanish called the tree encina, which is why Encinitas and Encinal are on the map."
