A tough old bird braised in red wine, lardons, mushrooms and onions, thickened with its own blood in the oldest versions. Burgundy cooks it in Burgundy and drinks the same wine with it.

The story Cited

The dish attaches itself to Julius Caesar in the usual apocryphal way. What it is, plainly, is a way to make a rooster edible: long, slow, wet heat and acid.
