A small pink bean grown in the Santa Maria Valley and almost nowhere else, cooked with bacon or ham, garlic, chilli and a little tomato, and served in a bowl beside the beef.
The story Cited
Considered indigenous to this valley; a cross between a pink bean and a small white one. Betteravia Farms began growing them commercially in 1972, and a handful of local brands still supply the barbecue trade.
