Cutting unripe bunches onto the ground in summer so the vine ripens fewer. Yield control with secateurs, after the vine has already set more fruit than the grower wants.
How it is done Tradition
Pinot crops generously if allowed to; appellation rules cap yield, and growers who want concentration cut below the cap. Done too late, the remaining berries just get bigger.
