Picking into small crates by hand, so the bunch arrives whole and the cellar decides what to do with it. A machine strips berries off the stem in the row, which settles the whole-cluster question before anyone gets a vote.

How it is done Tradition

Whole-cluster work, sorting tables and cold soaks all assume intact fruit. Steep slopes settle it anyway: no machine drives the Côte d'Or's mid-slope.
