Frying cheese in batter is old: a recipe for fried cheese sticks appears in Le Ménagier de Paris in 1393, though food historians hold that medieval French fried cheeses had little in common with what the modern stick became.
The American article dates to the 1970s. The historian Joel Jensen puts it down to two things arriving together: "the increasing availability of mass-produced mozzarella cheese beginning in the 1960s", and new efficient frying technologies for fast-paced food businesses such as bowling alleys and sports bars. The food writer Arthur Schwartz names mozzarella milanese — mozzarella dredged in flour, egg and breadcrumbs, then pan-fried — as the "prototype", a midweek Italian dish made from older mozzarella and eaten "within seconds" of leaving the pan.
Inference — the stick and the wing share a birth certificate. Both are cheap protein that only became a menu item once a bar had a fryer running all evening, and both spread through the same bowling alleys and sports bars in the same decade.
