Cubed pickled daikon in a sweet-sour brine, served cold in a small tub beside Korean fried chicken. Pickled radishes and beer or carbonated drinks are the standard accompaniment; Bonchon lists pickled radish among its side dishes alongside kimchi, coleslaw and Korean street corn.

The pickle has a longer name than the tub suggests. Danmuji is the Korean name for takuan, the yellow daikon pickle credited to the Buddhist monk Takuan Sōhō (1573–1645). It came to Korea during the Japanese occupation and was first called dakkwang, a phonetic rendering of takuan; after the occupation ended it was renamed danmuji, meaning sweet radish pickle. The Korean version is usually sweeter and crunchier than the Japanese original.

Tradition holds — the cubed white version served with fried chicken is called chicken-mu, mu being the radish, and it is a distinct product from the long yellow danmuji sliced into kimbap. This project has not found a source that dates that split.

Inference — the tub does the job celery does in Buffalo and white bread does in Nashville: something cold, cheap and sharp arriving unasked against something hot and fatty. Three traditions, three answers, one problem.
