It is a small convection oven with a basket, and the word fryer in the name is doing a lot of work.
A small countertop convection oven that reaches deep-frying temperatures without submerging the food in oil. It circulates air at up to 200 °C / 392 °F to brown food coated in a thin layer of oil, where conventional frying drives the same browning reactions at 140–165 °C / 284–329 °F by putting the food in hot oil instead. Food sits in a basket over a drip tray, and for small pieces the basket must be shaken.

The machine is younger than most people assume. Groupe SEB introduced the first air fryer in 2006 under the Actifry brand in the French market. The Dutch engineer Fred van der Weij invented it that same year and took it to Philips four years later; Philips launched the Airfryer at IFA Berlin in 2010 and patented the technique as Rapid Air. By 2018 air fryer was being used generically.
Adoption ran fast. A reported 36% of US households had a convection oven in 2020 and an estimated 60% in 2023; food manufacturers responded by adding air-frying instructions to products and selling pre-air-fried ones. In the UK a 2024 study claimed one in five Britons surveyed named the air fryer their most-used cooking device.
The verdict is not settled and this project does not settle it. Some reviewers find regular convection ovens or convection toaster ovens produce better results; others say air frying is essentially the same as convection baking; others praise the machines for cooking faster, being easier to clean and making crisp results easier than a full-size convection oven.
Inference — the wing is the machine's best case. It is small, it is mostly skin, and it carries its own fat, so the one thing the machine cannot supply is the one thing a wing brings with it.

Dry the wings, oil them thinly, and lay them in a single layer with space between; a crowded basket steams. Shake or turn partway, by hand or by the fryer's own paddle. Many cooks bring the baking powder trick over from the oven method. Sauce after, in a bowl, off the machine — sauce in the basket bakes onto the drip tray.

Tradition holds — the tradition treats it as a home appliance rather than a shop one, and the shops that describe their method never describe this.
