The mustard sauce of Maurice's Piggie Park at West Columbia, sold in bottles, half gallons and gallons alongside the family's Hickory Red, Vinegar and Hot Pepper sauces. It is the bottle that carried the South Carolina mustard sauce onto national supermarket shelves in the 1990s, then off them again in 2000. No ingredient list or Nutrition Facts panel is published for it, so this page can name the sauce and its history but cannot measure it.

Maurice Bessinger and his brother Joe Jr. opened Maurice's Piggie Park at West Columbia in 1953; by 1968 there were four drive-ins, by 2002 nine restaurants, and the mustard sauce went into supermarkets nationwide in the 1990s under the name Carolina Gold. The chain's refusal to serve Black customers produced Newman v. Piggie Park Enterprises, decided by the Supreme Court in 1968. On 1 July 2000, the day the Confederate flag came down from the South Carolina State House, Bessinger raised it over his restaurants and handed out tracts arguing that slavery was not inherently evil; nine grocery chains dropped the sauce, and his suit against them failed at the state Supreme Court in 2007. His children took down the last flag in 2013 and he died in 2014. The family sells the sauce as Southern Gold. The mustard sauce record carries that history in full; this page is about the bottle.

Sauce for Barbecues (receipt 335)
The nearest thing to a mustard barbecue sauce in a nineteenth-century Southern cookbook: a tablespoonful of mustard in half a pound of butter, sharpened with vinegar and both peppers. The maker's own formula is not published; these are free-to-use recipes of the same family, for a cook who wants to make a jar.
Savory Mustard Sauce
- ½ cup Dijon mustard
- ¼ cup chicken broth
- 1 ¼ tsp cornstarch
- 1 pinch of salt
- ¼ tsp freshly ground black pepper
- 1 tbsp olive oil
- 1 shallot, very finely minced
- 3 tbsp unsalted butter, divided
A modern mustard baste, built on Dijon rather than the prepared yellow mustard of the Midlands.
Barbecue Sauce (Sweet)
- 1 cup tomato catsup (ketchup)
- ¾ cup cider vinegar
- 2–3 tablespoons mustard
- 3 tablespoons Worcestershire sauce
- 1 cup brown sugar
- 1–2 teaspoons celery seed
- 3 tablespoons margarine
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper
- 1 teaspoon salt
- 1 teaspoon onion flakes
- Garlic powder or minced garlic to taste (optional)
