A bar of raised dough, fried, then topped end to end with maple-flavoured icing. Sometimes filled with custard or cream; sometimes finished with chopped bacon, which is a newer idea and an argued one.

The same pastry carries different names by region. Long John runs through the Midwest, Canada and Texas; the Mid-Atlantic and central Canada sometimes sell it as an éclair, though an éclair is choux and this is yeast; parts of the Midwest say finger doughnut or cream stick when it is filled. On the West Coast it is a bar — maple bar, chocolate bar, filled bar — and the maple one is the one the coast is known for.
