A donut shop's own trade is over by mid-morning and the rent is not. Jolly Chan, who opened China Express and Donut by the 24th Street BART station in San Francisco in 1993, told KQED in 2021 that the two menus sit together because the combination “came out of necessity” — “We have to sell more stuff to make up the rent and the expense.” That is the mechanism, in the words of somebody running it. How a shop gets on this page

Two kinds of evidence, and every row says which. A shop written up here carries the tag because a menu, a photograph of the board or a press piece names the item, and the record links to it. A row from OpenStreetMap carries the tag because the map itself records it — in the shop’s own name, or in its cuisine tags. A shop called “Donut & Burrito” is advertising the second menu on its sign.

That is a floor, not a count. Most shops selling egg rolls do not say so in their name, and most have never been read here. An empty panel says where the reading stopped.

Chain locations are left out of this page entirely. A company decides what is on its own board nationally, which is the opposite of the thing being counted here.
