Hot dog or hamburger meat and a meat hot sauce piled on a bed of side dishes — usually macaroni salad and home fries — with onions and mustard, and buttered bread alongside. Rochester's signature dish, and a trademark of one restaurant that every other restaurant has to work around.

Alexander Tahou, a Greek immigrant, opened West Main Texas Hots in Rochester in 1918. The first version was hots — standard hot dogs or Rochester-style white hots — with potatoes, cold beans and buttered Italian bread. His son Nick took over in the 1940s, renamed the place Nick Tahou Hots, added hamburger meat and macaroni salad, and introduced the chili-like hot meat sauce that holds the dish together; that sauce came from a family recipe belonging to a Mexican friend of Alexander's.

The name arrived from outside. By the 1980s college students were coming in and asking for "that plate with all the garbage on it". The family resisted — as they put it, "it's food; it doesn't sound good" — then filed a United States trademark for Garbage Plate in 1991, which stopped anyone else selling one under that name. So Rochester eats trash plates, junkyard plates, hot plates, rubbish plates, sloppy plates and messy plates instead, and The Red Fern sells a vegan Compost Plate.

Jim Memmott of the Democrat and Chronicle called it "Rochester's signature thing", arguing it eclipses Kodak. In August 2017 the Rochester Red Wings briefly renamed themselves the Rochester Plates for the dish's centenary, brought the name back in 2018 for Thursday home games, and unveiled a plate-themed mascot named Mac in 2019.
