Country Sweet dates itself to 1977, when Tom Lask worked up a sauce in a Rochester home kitchen; the company's own account calls it neither barbecue nor Buffalo. It sells the sauce in mild, hot and BBQ, and sells the wings hand-breaded. That is the firmest dated fact this project could find for the style.

Everything around it is thin. No published history of Rochester's breaded wing turned up in the sources searched here — no founder, no first bar, no year. The city's documented food identity runs elsewhere: the Garbage Plate, trademarked by Nick Tahou Hots and traced to 1918, and the Zweigle's white hot. Wings sit underneath that, carried by menus rather than by writing about menus.

Tradition holds — a half-and-half order comes half in the sweet sauce and half in hot, and a 'hot plate' means the wings and the sides under one pour. This project found no published source describing either, so both stay unverified here.

The rivalry gets stated in print even where the history does not. CITY Magazine, naming Jeremiah's Tavern the city's best wings, wrote: "It's easy to find really good wings on damn near every corner in Buffalo. Around here? A little more challenging."

Dredge the cut wing in seasoned flour — some shops dip in buttermilk or egg first, some go dry — and drop it in the oil. The coating browns into a shell that holds sauce on its surface instead of soaking it in, which is why a sweet glaze works here and slides off a bare Buffalo wing. Fry, then glaze: Country Sweet goes on as a sticky coat rather than a loose toss in a bowl. Blue cheese and celery come alongside, same as west of here. A tavern that fries bare will say so on the board; breaded and naked both sell in this city.

Bar menus carry long sauce lists beside the house breading: Jeremiah's Tavern, read on 16 September 2026, offered sixteen sauces including Garlic Parm, Cajun Dry Rub, Jamaican Jerk and Korean BBQ, with ten traditional wings at $17.99 and twelve boneless at $16.00.
