The heat levels are the menu: plain, mild, medium, hot, and whatever the house calls the one above that.
Hot chicken's method put on a wing: marinate in a water- or buttermilk-based seasoned blend, flour, fry, then paint with a cayenne paste loosened with fat drawn from the fryer. The paste stains the crust deep red and goes on with a spoon and gloved hands, then gets squeezed in. It lands on white bread with pickle chips — the bread catching the grease, the pickles cutting it — and the bread is part of the dish, not a napkin. Heat runs in named steps and the top step is genuinely punishing.

Anecdotal evidence puts spicy fried chicken in Nashville's African American communities for generations, perhaps from the 1930s, while the current style of spice paste may date only to the mid-1970s. The origin generally accepted belongs to the family of André Prince Jeffries, who has run Prince's Hot Chicken Shack since 1980; before that it was her great-uncle Thornton Prince's.
The story she tells is an accident. Thornton was, by the family's account, a womanizer; after a late Saturday night his girlfriend cooked him a fried chicken breakfast loaded with pepper as revenge. He liked it, and by the mid-1930s he and his brothers had a recipe and a café, the BBQ Chicken Shack. Wikipedia's article on the restaurant notes the story is impossible to verify.
The café started at 28th and Jefferson, moved downtown into Hell's Half Acre near the Ryman Auditorium, and drew Opry stars after performances — under segregation, with a separate room built at the back for white guests, reached by walking through the main dining room and the kitchen. Thornton's brother Will took over when he died, Will's wife Maude ran it after him, and in 1980 Maude decided the business should go to Thornton's great-niece, who dropped the BBQ from the name. The shop moved to Ewing Drive in East Nashville in 1988. In December 2018 a Ford Explorer crashed into the Ewing Drive strip mall and set it on fire; the restaurant itself was undamaged, but building damage and landlord delays turned a two-week closure into a permanent one seven months later.
Inference — the wing is a later cut than the dish. Hot chicken is a breast, thigh or wing quarter in its standard description, and the wing-only plate reads as the method following the market for wings rather than the other way round.
The method left town fast. Bill Purcell, Nashville's former mayor, sponsored the Music City Hot Chicken Festival and called his table at Prince's his "second office". By 2015 about two dozen Nashville restaurants served it. KFC put Nashville Hot Chicken and Nashville Hot Tenders on U.S. menus in January 2016 after a Pittsburgh trial it called the most successful product testing in its recent history, and ran it in the UK from 22 May to 18 June 2017. Buffalo Wild Wings sells a Nashville-hot-style wing. Prince's was named an American Classic by the James Beard Foundation in 2013.

Marinate the wings — nearly all hot chicken goes into buttermilk, for flavour and to keep the meat from drying in the oil. Flour them. Fry, in a pan at most houses rather than a deep fryer, though pressure fryers and deep fryers both get used. Make the paste: cayenne first, sometimes sugar, garlic or extra hot sauce, loosened with fat lifted out of the frying oil so it goes on hot and clings. Traditional order is paste after the fryer; some kitchens paste before breading and fry again. Spoon it on, squeeze it in. Serve on white bread with pickles. Chains built on the style include Hattie B's, Dave's Hot Chicken, Howlin' Ray's, Angry Chickz, Joella's and World Famous Hotboys. Hattie B's, founded by a father and son both named Nick Bishop, opened in Midtown Nashville on 9 August 2012, uses ghost peppers in its hottest step, and opened its first Midwestern location in Chicago's Wrigleyville in 2026.
