The first Hattie B's opened in Midtown Nashville on 9 August 2012, at 112 19th Avenue South. The name comes from three women in the Bishop family, all called Hattie. The company is privately held and family owned.

The chicken is the Nashville preparation: fried, spiced, laid on white bread with pickles. What Hattie B's added was a written scale. Six steps are posted — Southern (No Heat), Mild, Medium, Hot!, Damn Hot!! and Shut the Cluck Up!!! — and the top one is built with ghost peppers.

Expansion followed the ladder. West Nashville in June 2014, Birmingham, Alabama in June 2016, a third Nashville shop in November 2017, Midtown Memphis in April 2018, Atlanta in July 2018, The Cosmopolitan in Las Vegas that autumn, Dallas in February 2022, and in 2026 a first Midwestern shop in Chicago's Wrigleyville, with Wicker Park and River North announced.
