Mike Kurtz founded Mike's Hot Honey in Brooklyn in 2010 and went to work at Paulie Gee's pizzeria in Greenpoint the same year; the pizzeria put his honey on a soppressata pie called the Hellboy, which stayed a best-seller. He started a distribution operation in 2011 and got into Whole Foods, the first grocery chain to carry it, in 2014.

The category followed the brand rather than the other way round. Interest in hot honey rose as a trend in the early 2020s alongside the brand, tracked by a steady climb in Google search interest from early 2022; Business Insider called it a "new food obsession" in 2024, recipes spread on TikTok, and food companies including V8 and Tillamook put out hot-honey variants. By 2024 Mike's was carried in over 3,000 restaurants and 30,000 retail outlets in the United States.

Put on last. Honey burns and sugar goes bitter, so it goes on after the fryer, never before — drizzled over a dry-rubbed or lightly sauced wing so the crust stays audible, or cut into butter and hot sauce to make a sweet-hot toss.
