Chicago's word for a red-brown condiment poured over fried chicken and fries at South and West Side chicken shacks and barbecue counters, and particularly associated with Black communities in Chicago. The sauce sits near barbecue sauce and near mumbo sauce; recipes vary substantially, and many formulations combine ketchup, barbecue sauce and hot sauce.

The story Inference

The word was made popular by the restaurants, not by a bottler: Harold's Chicken Shack, Uncle Remus Saucy Fried Chicken and Lem's Bar-B-Q are the names the record attaches to it. Inference — that is why there is no canonical recipe to argue about and no single owner to sue: the sauce was a house formula at dozens of counters before it was anybody's product, and each house still answers for its own.

Where it overlaps with mumbo, the two words carry a live argument about which city's condiment came first. Mumbo has a trademark and a dated registration behind it; mild sauce has restaurants. Inference — those are different kinds of evidence, and they do not settle each other.
