A two-way choice about the finish, asked after you have picked a flavour. Dry means the cooked wing gets tossed in seasoning — powder on crust. Wet means it gets tossed in something liquid, so butter or sauce carries the same seasoning. Same flavour name, two different foods.

The pair reached a national audience through Atlanta. 'Lemon pepper wet' was invented at the American Deli in Atlanta; the second episode of the television series Atlanta put it in a character's hands from J.R. Crickets, which had no such item, and J.R. Order shape is flavour first, then the word: 'lemon pepper wet', 'hot lemon pepper dry'. Some Atlanta counters build wet by tossing in butter or buffalo sauce and then hitting the wings with dry seasoning anyway, which is a third thing with a two-word name. Dry travels better in a box; wet goes soft.
