Ordered as a side at the counter; in the east it is the cold one, against the hot boiled potatoes on the same plate.
Boiled potatoes cut up cold and dressed with mayonnaise, with hard-boiled egg, onion, celery, sweet pickle or relish and often a spoon of yellow mustard that colours the whole bowl. It is served cold beside the barbecue, and in the Carolinas it is the mayonnaise side that answers to the vinegar of the meat. Mustard in the dressing is common enough in South Carolina that a bowl of it can read as the same yellow as the sauce.

American potato salad came in with German immigrants in the nineteenth century, and the earliest American recipes are the German kind: cooked potatoes dressed with oil, vinegar and herbs, served warm. The north German version — cold, with mayonnaise, hard-boiled egg and sweet or sour pickle — is the one the American bowl most resembles. Mayonnaise made the change possible on this scale, and in the Carolinas that means Eugenia Duke, who began bottling hers in Greenville, South Carolina around 1923. Aunt Caroline's Dixieland Recipes, printed in Chicago in 1922, already gives the Southern shape of it: five cold boiled Irish potatoes diced, three hard-boiled eggs, parsley, celery, salt and both peppers, bound with an oil dressing made at home. Inference — the sweet pickle and the mustard that distinguish a Carolina bowl from a German one are the same two things that distinguish the region's slaw and its sauce.

Potatoes are boiled in their skins, peeled and diced while still warm so they take the dressing, then cooled. Hard-boiled eggs are chopped in, with onion, celery and sweet pickle relish; the dressing is mayonnaise, sometimes cut with a little of the pickle liquor, and yellow mustard to taste. Salt, black pepper and paprika finish it. It is made in the morning and kept cold, and at a pit it is dished with an ice-cream scoop.

The dressing is a hand-made mayonnaise; the brackets are this site's, everything inside them is the book's. Irish potato is the old Southern name for the white potato, said against the sweet potato.

- 2 pounds (~1 kg) potatoes
- 6 slices of bacon
- ½ cup (120 g) finely-chopped yellow onion
- 2 tablespoons white granulated sugar
- ½ teaspoon celery seed
- 2 hard boiled eggs
- ¼ cup (60 g) flour
- ½ cup (120 ml) vinegar
- 1 cup (240 ml) water
- 1 tablespoon fresh parsley
- 1 ½ teaspoon salt
- Pepper
- Paprika
American Potato Salad I
- 2 pounds (3–4 ea.) medium russet potatoes
- 1 tablespoon plus ½ teaspoon salt
- 2 tablespoons distilled white vinegar
- 1 medium rib of celery
- ¾ teaspoon celery seed
- ¾ cup mayonnaise
- ¾ teaspoon powdered mustard
- 2 tablespoons minced onion
- 2 tablespoons minced fresh parsley leaves
- ¼ teaspoon ground black pepper
- 3 tablespoons sweet pickle relish
Makes 6 servings.
American Potato Salad II
- 3 pounds small white potatoes (use waxy or red potatoes)
- Salt
- Ground pepper
- 5 large hard boiled eggs, chopped
- 1 medium red onion, chopped finely
- 2 tbsp chopped sweet basil leaves
- 1 cup corn
- ½ cup freshly-squeezed lemon juice (from 2–3 lemons)
- ½ cup extra-virgin olive oil
- 2 tbsp pasta seasoning
Not to be confused with
- boiled potatoes — Boiled potatoes come hot, whole or halved, with no dressing but butter or the pork's sauce. Potato salad is cold, cut small and bound with mayonnaise.
