A pork-shoulder pit and ice-cream counter on North Main Street in Lexington, Davidson County, that began in 1955 as a dairy bar, put a shoulder on a pit one slow winter, and has been the Conrad family's since: Sonny Conrad (1938–2013), who started on curb service there as a teenager in 1955 and became owner in 1969, his wife Nancy, and their sons Michael and Cecil. Shoulders cook over hickory; the barbecue comes chopped, sliced or 'brown' — the smoky outside of the shoulder — with the dip and red slaw. The ice cream never left: about 200 gallons a week, much of it in a banana split of three and a half pounds.

The dairy bar of 1955 sold ice cream on Main Street, and in the 1960s the strip was a cruising street for hot rods; Sonny Conrad later put up metal railings to keep the place a family one, Our State wrote in 2014. Ice cream sales dip in winter, so one winter a pork shoulder went on a pit, and the restaurant's own history says it moved to its present building at 900 North Main in the late 1950s. Conrad had begun as a curb-service boy in 1955; in 1969 he married Nancy, a waitress there, and became the owner. He told the Southern Foodways Alliance in November 2011 that the kitchen made a hundred gallons a week each of dip and red slaw, that four customers in ten still ate in their cars, and that 'red slaw. That's a good vegetable.' He died in 2013; Nancy still worked, and the sons ran the day to day. Southern Living and Good Morning America have both come for the banana split. New airtight pits went in around 2013, glowing orange with coals; the dining room seats about a hundred at booths and a counter.
