A take-out barbecue stand on Dreher Road in West Columbia, open only on Friday and Saturday, where the Hite family has cooked whole hogs and hams over oak and hickory coals since 1957. It sells chopped pork, ham, ribs, pork skins, chicken, hash and rice and slaw by the plate and the pound, with a yellow mustard sauce applied lightly; there is no dining room, only picnic tables by a pond. The hash — the Midlands' stew of pork and onion — is made in cast-iron kettles over wood embers. It is not Jackie Hite's of Batesburg-Leesville, some twenty-five miles west, which closed in 2018.

John D. Hite farmed on Dreher Road — minnows, hogs, corn and sweet potatoes — and in 1957 began selling barbecue as a side project, a farmer looking for extra income. The stand stayed a two-day business beside the farm and passed to his grandson David Hite, who runs it with the family recipes and, in the words of the restaurant's site, 'the age-old process for cooking barbeque'. Destination BBQ describes that process: coals rendered in a modified campfire fashion, then shoveled, 'payload after smoky payload', under whole hogs and hams until the meat is lacquered with smoke. The hash is cooked the old way in cast-iron kettles over wood embers, and the stand makes an onion sausage that Destination BBQ calls unique to the Midlands. Inference — the Dreher Road Hites and Jackie Hite of Leesville share a Lexington County surname and a mustard sauce; no source in this project links the two businesses.
