The French brought coffee to the Gulf Coast and the Mississippi around 1700. During the Civil War, with coffee short, New Orleans Creoles stretched it with chicory, which adds a chocolate-like note. The practice outlived the shortage.

Today Tradition

Served at Café du Monde and across New Orleans, beside beignets, in a cup that leaves sugar on the rim.
