in the kitchenThe batter and the depositor
also: depositor · the drop
Two levers and a plunger: the ring lands in the fat already round.
A thick chemically-leavened batter dropped straight into hot fat through a hand-held or bench depositor, which forms the ring as it falls.
The story Cited · wp-cake-doughnut
Cake batter uses cake flour, about 7 to 8 percent protein, and baking powder or soda rather than yeast. Commercial shops often start from a dry mix that takes only water — which is how the same donut turns up in shops two thousand miles apart.
This is the dough that industrialised. When shops were streamlining in the 1920s and 1930s, chemical leavening behaved the same way every morning and a machine could be built around it.
How it is done Cited · wp-cake-doughnut
Mix, rest, load the hopper, drop rings in rows, and turn them once with sticks when the underside sets.
Today Cited · wp-cake-doughnut
A depositor is what lets one person run a case alone.
