Pink Box

in the kitchenThe raise

also: proofing · the rise · bulk ferment

The dough is worked when it is ready, not when the clock says.

Baker's yeast fermenting a sweet dough until it is full of gas — once in bulk, once again after the rings are cut.

The story Cited · wp-proofing-baking-technique

Proofing is the rest in which yeast ferments the dough and makes the gas that lifts it. Blooming is a different thing with the same word: suspending dry yeast in warm water to hydrate it, and to see whether it is still alive.

The raise is why the raised donut lost ground when shops automated in the 1920s. Yeast needs time and a warm room, and the dough is harder to handle; baking soda was predictable and easy to build a machine around, so most bakers went to cake.

How it is done Cited · wp-proofing-baking-technique

Mix, bulk rise, sheet, cut, then proof the cut rings again in a warm cabinet until they are light enough to float sideways in the fat.

Today Cited · wp-proofing-baking-technique

The raise is the reason the shop opens at four and the work started at one.
