Cake batter uses cake flour, about 7 to 8 percent protein, and baking powder or soda rather than yeast. Commercial shops often start from a dry mix that takes only water — which is how the same donut turns up in shops two thousand miles apart.

This is the dough that industrialised. When shops were streamlining in the 1920s and 1930s, chemical leavening behaved the same way every morning and a machine could be built around it.
