Filled fried dough is older than the ring — Gefüllte Krapfen are in a Nuremberg cookbook of 1485 — but the injector is what makes a case full of them possible before six in the morning. Fillings run to fruit preserve, custard, Bavarian cream, and in Polish shops powidła, stewed plum, and wild rose petal jam.
